기타 : High-Kilned Malt란. 거의 모든 맥아 곡물은 Kilned 이다. 킬닝(kining)은 발아된 맥아를 가열하여 성장을 멈추고 오래 보존하기 위한 맥아 제조 과정 마지막 단계이다. 킬닝 시간과 온도는 연하거나(pale) 진한 High-Kilned 맥아를 만들기 위해 조정한다. 맥아가 더 짧은 시간, 더 높은 온도로 킬닝하면 소위 High-Kilned Malt가 된다. 더 높은 온도는 효소 감소를 가져오고 영양은 줄게 되지만 독특한 맛을 만든다.
